One large glass jar with lid
sliced cucumbers (enough to pack the jar)
1 cup water
1 cup apple cider vinegar (you can use less according to taste – one cup kind of makes your eyes water)
8 cloves garlic
1 tablespoon sea salt
2 sprigs of fresh dill (or 4 tsp dill seeds)
2 teaspoons whole peppercorns
1/2 teaspoon red pepper flakes
For brine, combine vinegar, water and salt in a pot and bring to a boil.
Add garlic cloves, dill, peppercorns and red pepper flakes to jar. Pack cucumbers tightly into jar without crushing them. Pour brine into jar, leaving 1/4 inch headspace below rim of jar.
Let jar cool to room temperature before screwing the lid on. Once cooled and closed up, refrigerate for a few days to allow flavors to soak in.
